About a month or so ago I went to the 2013 Portland Women's Expo with a few girlfriends. It's a sales expedition with companies from spas to food vendors, beer and wine to exercise equipment...all with the sales pitch towards women. It was a lot of fun and it was actually here that K connected for her Passion Party.
One of the vendors (and I sadly don't remember the name of the company...Recipe Girl or something like that) gave me this recipe for Biryani Quinoa Salad and I wanted to share it with you.
Biryani Quinoa Salad
2T rice vinegar
3T olive oil
1tsp curry powder
1/2 C walnuts, toasted, chopped (you could use any nut you wanted)
1/2 C unsweetened coconut, toasted
1/2 C dried apricots, chopped (or any dried fruit...cranberries, etc)
1C mixed greens
In a large saucepan, bring the quinoa and 2 cups of water to a boil. Reduce heat to a medium and cook for 10 minutes, until the quinoa is fully cooked (and crunchy). Pour the quinoa through a strainer and let sit to dry out. Meanwhile, combine the next four dressing ingredients in a small bowl and pour over the quinoa. Fluff with a fork to combine the dressing and gently stir in the remaining ingredients. Season to taste with salt an pepper.
